Cherry Pecan Loaf
Ingredients
- 2 ¼ cup (281g) all-purpose flour
- 1 teaspoon (4.6g) baking soda
- ½ teaspoon (3g) salt
- ¼ cup (28.25g) margarine, softened
- ¼ cup (50g) sugar
- ½ cup (118.4mL) egg substitute
- 6 packets Equal® sweetener
- ½ cup (122g) unsweetened applesauce
- 1 teaspoon (4.92mL) vanilla extract
- ¼ teaspoon (4.92mL) almond extract
- 1 serving (can) Glucerna SR™, vanilla
- 3 ounces (84g) dried red tart pitted cherries
- ½ cup (55g) chopped pecans
Preparation
- Preheat oven to 350 degrees F (177 degrees C)
- Spray 9 x 5-inch (23 x 12.7cm) bread pan with vegetable oil, and flour sides
- In medium bowl, combine flour, baking soda, and salt. Set aside
- In large bowl, cream margarine and sugar together. Add egg substitute and continue to mix for an additional minute. Add Equal®, applesauce, vanilla, and almond extract
- Alternately add flour mixture and Glucerna SR™ until ingredients are just moistened. Stir in cherries and nuts
- Pour batter into prepared pan
- Bake for 50 to 60 minutes or until inserted toothpick comes out clean
- Cook completely before slicing
