Cherry Pecan Loaf

Ingredients

Glucerna SR: Diabetes Diet Information
  • 2 ¼ cup (281g) all-purpose flour
  • 1 teaspoon (4.6g) baking soda
  • ½ teaspoon (3g) salt
  • ¼ cup (28.25g) margarine, softened
  • ¼ cup (50g) sugar
  • ½ cup (118.4mL) egg substitute
  • 6 packets Equal® sweetener
  • ½ cup (122g) unsweetened applesauce
  • 1 teaspoon (4.92mL) vanilla extract
  • ¼ teaspoon (4.92mL) almond extract
  • 1 serving (can) Glucerna SR™, vanilla
  • 3 ounces (84g) dried red tart pitted cherries
  • ½ cup (55g) chopped pecans

Preparation

  • Preheat oven to 350 degrees F (177 degrees C)
  • Spray 9 x 5-inch (23 x 12.7cm) bread pan with vegetable oil, and flour sides
  • In medium bowl, combine flour, baking soda, and salt. Set aside
  • In large bowl, cream margarine and sugar together. Add egg substitute and continue to mix for an additional minute. Add Equal®, applesauce, vanilla, and almond extract
  • Alternately add flour mixture and Glucerna SR™ until ingredients are just moistened. Stir in cherries and nuts
  • Pour batter into prepared pan
  • Bake for 50 to 60 minutes or until inserted toothpick comes out clean
  • Cook completely before slicing
